Making Guacamole

I have been SO excited about doing this post. This is probably my most favorite recipe to date. You see, guacamole has a special place in my heart. Not just any guacamole though. This guacamole. This treasured family recipe of ours has been made, and remade, countless times since before I can remember, and it’s creamy smooth goodness fills me with memories of summer and good food. It’s been made so many times that the original recipe is long gone, we just throw the ingredients in there and “eyeball it.” I know this rich-in-healthy-fats-for-your-heart recipe by…well, heart.

And now, I unleash the family secret recipe to you. The last time I made it I took the time to measure out what I normally do so I could share it with you. Remember though, with great power, comes great responsibility. You will probably get attacked for the recipe like I so often have, so watch your back. If they get too aggressive, keep a few avocados on hand to hurl while you shout out my blog address from a safe distance to appease any hard feelings 😉 .

Some nutrition info for ya: Avocado is considered a healthy fat. They are packed with numerous essential vitamins and minerals including vitamin A, C, K, folate and potassium, not to mention they will help you better absorb fat soluble vitamins (A, D, E, K) from other foods you eat.

For those counting carbs, keep in mind that 1/2 an avocado is about 9 grams of carbohydrate. The rest of the ingredients here (onion, tomato, etc.) are very low carb. But, if you ate enough in one sitting, it could eventually add up to 1 carb count (15 grams of carbohydrate) or more.  Then make sure you are counting tortilla chips if you are having those with it (baked chips are best, 15-20 chips or 3/4 oz is 1 carb count). It is also calorie-dense, having 50 calories per 1 oz, so if you are watching calories, keep that in mind also. If you or someone you know is trying to gain weight on the other hand, make this and top everything with it.

If you are looking for a healthy dip, or maybe a way to jazz up burgers or fajitas at your next summer get-together, this is the one. Unlike premade guacamole mixes, it has no artificial ingredients, is much lower in sodium than most, and as I said before, it just tastes leaps and bounds better than any guac I have ever had before. Plus, it’s quick and easy.

Ok….will get to the point now. Drum Roll Please!!

3) Serve the guac immediately and enjoy!

Give it a try and let me know how it turns out for you. I will be making this for Matthew’s 2 year old birthday party. He will eat it by the fistful while squealing in green-gooey delight. Kinda starts to look like a cute little Hulk after awhile…

One last thing…my Grocery Shopping Smarts and Label Reading class is THIS Thursday for those of you in the Central TX area. Check out www.food4success.com for more info on signing up!

Until next time!
