Last week I received a Paperless Post invitation that read, “You are invited to a Mother/Daughter Virtual Slumber Party”! My first thought was, what a great idea, followed by, what creative recipes can make for this FANTASTIC event? I immediately began planning and quickly remembered a recipe I stumbled across in the spring – Watermelon Rice Krispie Treats. My first go at the recipe was a huge success, the kids literally ate them up in one day. Okay, maybe I helped a little, but they were just so darn cute – and tasty too! I now had a reason to make them again – these Watermelon Rice Krispie treats would be the perfect snack for our virtual Mother/Daughter Slumber Party. A much needed girls’ night indeed!
Now the recipe. There’s nothing more classic than a rice krispie treat. When I was a kid, I would purposely get my hands sticky with the marshmallow-y rice krispie mixture just so that I could eat the bits straight from my hands. Grab the kids and head to the kitchen, this recipe is guaranteed to create fun memories for you and your family!

Watermelon Rice Krispie Treats
Ingredients
- 4 tbsp butter
- 1 10 oz bag marshmallows
- 4 cups Rice Krispies cereal
- 4 drops red food coloring
- 4-6 drops green food coloring
- mini or regular chocolate chips
Instructions

In a large sauce pan melt the butter. After the butter has melted, add your bag of marshmallows and constantly stir until the marshmallows have completely melted.

Pour in 2/3 of the marshmallow mixture in a large bowl. Add 4-6 drops of green food coloring and stir. Add in 2 cups of Rice Krispies, stir until mixed well.

Scoop out green rice krispies and create a ring around the outside of a round cake pan.

Next, add 4 drops of red food coloring to the remaining mixture left in the original bowl and stir. Add in the pink rice krispies to the pan and pat down until smooth.

Place desired amount of mini chocolate chips face down to resemble the seeds of a watermelon.
Recipe Notes
Pro Tip: After cutting your watermelons into slices, push a stick through the bottom and you’ll have Watermelon Rice Krispie Treat Popsicles!
Making treats at home are usually taste better than store bought, and for this recipe that is the case. That way you can reduce the amount of processed foods and preservatives. Hope you enjoy this recipe as much as we did!
