Happy Fall Ya’ll! It may still be 80 degrees here in Texas, but we will take it from the 90-100 degree weather all Summer long. Dumpster fire 2020 is not going to keep getting me down, because I am embracing my favorite season with open arms and am optimistic things will keep getting better.
Work is so busy (for which I am very, very grateful for when I know there are other small businesses that unfortunately cannot say the same), but I had to take a few minutes to share something pumpkin-y. What better distraction from everything than frolicking in pumpkin patches, playing with your Fall decor, and perhaps…enjoying a PUMPKIN PIE SMOOTHIE!
For you fellow pumpkin lovers, pumpkin is fairly low carbohydrate with around 8 grams per 1 cup, but LOADED in fiber. If you haven’t met me, I am a lover of the always under-appreciated fiber. Fiber is found in fruits, vegetables, and whole grains. We tend to not get enough of it in the American diet, and its importance in immunity is really under-rated. Like, really under-rated. We know it helps us use the restroom and lowers our cholesterol, but did you know that fiber improves your gut microbiome that is hugely responsible for your immune system? And what better time to build that up than now? Smoothies like these are a great and convenient way to rack up that fiber, just remember if you don’t have a lot of fiber in your diet now, go slow to avoid stomach upset. It takes awhile for your gut to adjust.


Pumpkin Pie Smoothie
Pumpkin pie in a cup!
Ingredients
- 1/4 cup Canned pumpkin puree
- 1 tsp ground flax
- 1 tsp vanilla
- 1 Tbsp peanut butter
- 1 Tbsp honey
- 1 cup milk of your choice
- 1/2 tsp pumpkin pie spice optional
Instructions

Combine all ingredients in a blender, mix until well combined and smooth. Enjoy!
